Braai Pie Recipe!

Family Secrets! Dad's Braai Pie Recipe.


Like many other family's, food always brings mine together. In my new series, Family Secrets I will be sharing some of my family members' favourite recipes.


This week we have a super easy and extremely South African recipe from my dad. My dad's name is Dries or as my brother and I like to call him, Ballie Dries. I grew up in a household where stereotypical gender roles were not very prominent and my dad could be seen in the kitchen just as often as my mom. My dad is a great cook but like many South African's my dad is obsessed with braaing. And that's why he has decided to share a super simple braai pie recipe.


This recipe is extremely adaptable and you can substitute or add almost any ingredient that you like. In this recipe, we have made a meat-free braai pie as we served it as a side dish with our braaivleis. But you can easily add meat to the pie and have it as your main dish.


Serves 6-8 people



Ingredients:

  • 2 x rolls puff pastry

  • 1 onion

  • 1 bunch of spinach

  • 1 cup cheddar cheese

  • 1/4 cup goats cheese or feta cheese

  • 2 tbsp olive oil

  • 1/2 tsp crushed garlic

  • 2 tbsp butter

  • salt and pepper to taste

Instructions:

1. Defrost puff pastry.

2. Chop onion into rings and saute until caramelised. I used 2 tbsp olive oil and 2 tbsp balsamic vinegar. (but you can use whatever you like to cook the onions)

3. Wash and chop the spinach into small pieces. (If you are using baby spinach you can skip the next step.) In a large pan on medium melt 2 tbsp butter and 1/2 tsp crushed garlic. Add the chopped spinach to the butter and cook until soft. Add 1-2 tbsp of water if the pan is too dry.

4. Grease the grid to ensure that the dough does not stick.

5. On a cutting board roll out the dough. Make sure to keep the plastic under the piece of dough so that it's easier to move later. Using a fork poke holes in the dough.

6. Layer the spinach evenly on the first piece of dough. Leave about 1-2 cm space from the edge so that you can crimp the two pieces of dough together later. Then add the onions, cheddar and goats cheese. Remember to add some salt and pepper to taste. Once all of your ingredients in, roll out the second piece of dough and place it on top of the filling. Using a fork, crimp together all of the edges.

7. Brush the top of the pie with some milk or egg. Transfer the pie to your grid and place it high above a warm fire. Turn regularly to avoid burning. Cook until both sides are golden brown. Serve warm.
