The Best BBQ Ribs

Family Secrets! Adam's to die for bbq rib recipe!

My family absolutely loves food and like many other families its something that always brings us all together. Every one of my family members has their own secret or signature recipe. I have asked all of them if they would share one recipe and one piece of life advice with me. Some of them live in Durban and the rest are all over the place but I have come up with a plan to include them all.

I can not explain how happy I am that I was able to collaborate with Adam. Adam is my uncle and like a lot of people in our family, he works out of the country for a large part of the year. I honestly did not think that we would be in the same place again anytime soon but I am so happy that we're both in Durban at the moment.

Adam makes the most amazing, fall off of the bone ribs. Every time we eat these ribs I can't help but think of the time that his son-in-law came to visit and we all compared his ribs to Adam's. His ribs were great, don't get me wrong but it's hard to compete with Adam's.

Adam suggests pairing the ribs with a potato bake, garlic bread, or veggies of your choosing. He also insists on having a Stroh Rum and Coke while enjoying a couple of ribs.

This recipe serves 10-12 people. It can easily be adjusted for more or fewer people.

Ingredients:

  • 3-4 Racks of Smoked Pork Ribs

  • 750ml Jimmy's Steak House Sauce or any BBQ sauce of your choosing

Instructions:

1. Ask your butcher to slice the ribs into individual pieces or simply do it yourself.

2. Use a pot big enough to fit all of the ribs. Bring 1 liter of water to a boil. While the water is boiling on the stove, boil another liter of water in a kettle. This will help speed up the process.

3. Once the water in the pot is boiling add the ribs to the pot. Add the remaining boiled water from the kettle to the pot. The majority of the ribs should be covered with water, leaving just enough room so that the pot does not boil over.

4. Place a lid on the pot and set a timer for 1 hour. Let the ribs simmer in the pot for at least an hour. After the hour check the ribs with a fork to see if the meat is tender. If it is not tender enough for your liking, let it simmer for another 15 minutes.

5. After an hour, turn the heat on the stove down and drain the water from the pot. Pour the BBQ sauce over the ribs and ensure that all of the ribs are evenly coated. Place the lid back on the pot and let the ribs sit in the sauce for another 30 minutes.

6. While the ribs are marinating in the sauce, you can start your fire. Once the fire is ready, remove the ribs from the pot. Do not get rid of the remaining sauce in the pot. Put the sauce in a separate bowl as that will be used to baste the ribs as they are placed on the fire.

7. As the ribs are already cooked, they do not need to be on the braai for a long period of time. You simply want to get a few grill marks on the ribs. Before placing the ribs on the braai, remember to coat them in the leftover sauce.

8. After braaing the ribs for a couple of minutes, remove them from the braai and enjoy with a side of your choosing. Don't forget to pour yourself a rum and coke. This can also be enjoyed while you are braaing.
