Easy Vanilla Buttercream Icing Recipe

Writer's picture: Nannette ErasmusNannette Erasmus

This is the easiest icing recipe ever! I use it all the time and it is also the vanilla icing used in all @net.baked cakes & cupcakes!

This vanilla icing is really easy to work with & will not separate if you add gel food colouring to it.

If you make too much just pop it in a container in your fridge for up to two weeks. Take it out a couple of hours before you want to use it and let it sit at room temperature.

Ingredients:

  • 150g Butter (I use white wooden spoon baking butter)

  • 300g Icing Sugar

  • 2 tbsp Milk

  • 1 tsp Vanilla Essence

Instructions:

1. Measure all of your ingredients before you start. Ensure that your butter is soft but not fully at room temperature.

2. In a large mixing bowl, using an electric mixer cream the 150g of butter until soft.

3. Add the vanilla essence to the creamed butter.

4. Gradually add in the 300g of icing sugar. It will look lumpy at first but just continue to mix until everything is incorporated.

5. The mixture should be stiff but smooth. Add in the 2 tbsp of milk and mix until the icing is soft and smooth.

6. All done! Add the icing to a piping bag or simply spread over a fresh cake.
