The Perfect Steak!

Family Secrets! Wayne's Steak Recipe!



My family absolutely loves food and like many other families its something that always brings us all together. Every one of my family members has their own secret or signature recipe. I have asked all of them if they would share one recipe and one piece of life advice with me. Some of them live in Durban and the rest are all over the place but I have come up with a plan to include them all.


To me, the word family does not just mean blood, over time anyone can become your family. In the past 9 years that I have known Derwent I have grown closer to his family, The Stopforth's. His dad, Wayne, or as I call him Waynie has a full proof steak recipe. Wayne wants you all to know that he is the braai master of Durban and that if you follow all of his instructions that you will never have a dry or overcooked steak again. Wayne also insists on using kameeldoring hout for your fire but if you can't find that I'm sure any wood or charcoal will suffice.



Ingredients:

  • 1 x 500g - 1kg beef steak (minimum of 3cm thick)

  • Salt

Instructions:

1. Take your steak out of the fridge at least 2 hours before you want to cook it. It is important that the steak is room temperature by the time you cook it.

2. 1 hour before cooking your steak, generously sprinkle salt on one side of the steak. Cover with a cloth and let it sit for 30 minutes. After 30 minutes, flip the steak over and coat the other side with salt and let sit for another 30 minutes.

3. While your steak is chilling with the salt rub, start making your fire. You want your fire to be sizzling hot. You can test the heat of your fire by holding your hand over the fire and you should not be able to hold your hand over the fire for more than 10 seconds.

4. Once your fire is hot make sure that you have a timer set to exactly 3 minutes. If your steak is thicker than 3 cm then set your timer for 4 minutes. As soon as you place the steak on the fire start your timer. Only flip the steak when the timer goes off. Once you flip the steak start another timer for 3 minutes. Once the full 6 minutes have passed, remove the steak from the fire and let it rest for at least 8 minutes before serving.

5. Slice the steak into strips and serve with your favourite side dish. I love a good potato bake and garlic with my steak.
