I am a sucker for sweet treats. Fudge always seemed like such a mission to make until I tried this recipe. It feels like I'm doing a bit of a science experiment when making fudge but it just adds to the fun of it.
This fudge is great to have in the house as a sweet treat or to give as a gift to family and friends.

Ingredients:
1 can or 370g of Condensed Milk
2 cups White Sugar
1 tbsp Golden Syrup
1/3 cup Water
60g Butter
1 tsp Vanilla Essence
If you have a candy thermometer it will come in handy but you can easily make this recipe without one.
Instructions:
1. Line a rimmed baking tray with baking paper or spray with a non-stick spray.
2. Add the water and sugar to a large pot. Dissolve the sugar on medium-low heat. This can take 5-10 minutes depending on your stove or where you are in the world. The most important thing to look out for is that there are no sugar crystals left.
3. Once the sugar has dissolved add the butter and syrup to the pot. Stir continuously until the butter is melted.
4. When the butter is melted, add the condensed milk to the pot.
5. Once you have added the condensed milk concisely stir the mixture as you do not want it to burn or stick to the pot. The mixture will start to boil and slowly turn from a milky beige to a caramel brown colour. This process will take approximately 10 minutes. Just keep an eye on the colour of the mixture. If you have a candy thermometer, the mixture has to reach 115 degrees celsius.
6. Remove the pot from the heat once it has reached a thick and caramel brown consistency. Add in the vanilla and stir until it is fully incorporated.
7. Add the mixture to a lined baking tray and leave to cool. When the mixture is completely cold to the touch it can be sliced into squares and is ready to eat.
8. Store the fudge in an airtight container for up to a week.
