Brownie Freezer Fudge!

Extremely Easy Freezer Fudge.



The first time I had this fudgy/ brownie hybrid I was a sometimes overly confident yet nervous16-year-old who would ask my boyfriend to get me a few more blocks when his mom was not looking. Well fast forward a couple of year's and I finally asked Willa for the recipe. Willemien has a bunch of unique recipes that I still need to get my hands on. Once lockdown is over I hope to convince her to do a cook with me. Keep an eye out on my Instagram for this collab. This recipe, like many of my other recipes, is really easy to make and only uses a hand full of ingredients. It's ready to eat in a couple of hours but it also stores really well in the fridge or freezer.


This recipe makes 30-40 pieces of fudge. The recipe can easily be halved if you'd like a smaller batch.



Ingredients:

  • 2 Packs of Marie Biscuits or 400g of any plain biscuit

  • 2 Eggs

  • 100ml Cocoa

  • 500g Icing sugar

  • 250g Butter

  • 1tsp Vanilla Essence

Instructions:

1. Smash biscuits into small pieces and set aside for later use.

2. Melt butter on low heat in a large pot. Once the butter has melted remove the pot from the heat and add in the cocoa and icing sugar. Mix until it is incorporated.

3. Break eggs in a separate bowl and whisk with a small amount of the butter mixture. This will prevent the eggs from cooking too fast when they are added to the mixture. Add the eggs to the mixture and cook on a low heat for 2-5 minutes.

4. While the mixture is cooking add in the vanilla essence.

5. Once the mixture has cooked for a few minutes, remove the pot from the heat and add the biscuits.

6. Mix until all of the biscuits are covered. Then pour the mixture into a greased pan with high sides.

7. Smooth out the mixture and let it sit in the fridge for a minimum of 2 hours.

8. Once the mixture has set, cut into even cubes and store in the fridge or freezer.
