Creamy Prawn Starter!

Family Secrets #4


This week on Family Secrets, I have convinced my aunt, Wanda to make her famous creamy, prawn starter.

As I have mentioned before, food is something that always brings my family together. Although my aunt is not big on cooking, she does have a few signature recipes up her sleeve. This being my absolute favourite.


We might be a big Afrikaans family but I have always called my aunts and uncles by their first names. Wanda is a woman with many talents. She inspires us all daily and as I have grown older, I like to think that she and I have grown much closer. We share a mutual love for traveling the world, exploring new places, and of course, wine. This recipe serves 6-8 people.

Add any type of pasta if you would like to make this a main course.




Ingredients:

  • 1 bag of Frozen Small Prawns or Shrimp (400g - 500g)

  • 250ml Fresh Cream

  • 1 cup Cheddar Cheese

  • 2 tsp Crushed Garlic

  • 2 tbsp Butter

  • Salt and Pepper to taste

  • Garlic Bread or Bread of your choosing


Instructions:

1. Defrost the prawns.

2. In a medium, pot melt the butter and add in the garlic. Once the butter has melted add in the prawns.

3. Add salt and pepper to taste and stir until everything is combined. Let the prawns simmer for 3-5 minutes.

4. If the frozen prawns create a lot of liquid just wait it out as it will reduce while simmering. If you think that it will not reduce enough, then mix together equal parts milk and cornstarch in order to create a slurry. Add the slurry to the prawns and mix until the sauce starts to thicken up.

5. Add in the fresh cream and mix until everything is combined. Let the mixture simmer until it is thick and creamy.

6. Once the cream starts to thicken, taste the sauce to see if it needs more salt. Add as you see fit.

7. Add in the grated cheese and mix until all of the cheese has melted.

8. Serve warm with garlic bread or thinly sliced pieces of french bread.
