Easy Meringues!

Whenever I think of meringues, I think of the animal-shaped treats I used to eat at parties as a kid. I also think of the fact that I still refer to meringues as skuimpies. Which literally translates to tiny foam and that's exactly what these are. They are tiny, delicious bites of foam. If you ever have extra egg whites or you just want a treat, then definitely try this recipe.


This recipe makes 24 small to medium meringues.

Ingredients:

  • 3-4 Large Egg Whites (room temperature)

  • 1 cup Castor Sugar

  • 1 tsp Vanilla Essence

  • pinch of salt



Instructions:

1. Pre-heat oven to 120 degrees celsius.

2. Using an electric mixer or kitchen aid, mix together the room temperature egg whites and a pinch of salt.

3. Once the egg whites start to look foamy, gradually add in the castor sugar. Add in about 2-3 tablespoons of sugar and mix well before adding more.

5. Mix the egg whites and sugar until the mixture forms stiff peaks. Then add in the vanilla essence and mix until it is all incorporated.

6. You know your egg whites are stiff if you can turn the bowl upside down without the egg whites moving.

7. If you would like the meringues to be different colours, then I suggest using gel food colouring and folding it into the mixture gently.

8. Line a baking tray with wax paper and using a spoon, dollop the mixture onto the tray. Leave enough room between each meringue for it to expand. If you have a piping bag, then you can pipe the mixture onto the lined baking tray. It's completely up to you.

9. Once all of the meringues are on the tray, put it in the oven for 1 hour and 30 minutes. As soon as you put the meringues in the oven, turn the oven temperature down to 90 degrees celsius. After the hour and a half of baking, leave the meringues in the oven but turn the oven off. Wait for the oven to be cool to the touch before removing the meringues. This will ensure that you get a crisp meringue.

10. Once the oven is cool, remove the meringues and enjoy. Store in an airtight container for up to a week.
