Family Secrets! Mom's Vetkoek Recipe.

My family absolutely loves food and like many other families its something that always brings us all together. Every one of my family members has their own secret or signature recipe. I have asked all of them if they would share one recipe and one piece of life advice with me. Some of them live in Durban and the rest are all over the place but I have come up with a plan to include them all.
First up, we have my mom. My mom's name is Hannelie but I call her Hanna Hoekom. She always asks a boatload of questions. Even though we tease her about it, it has been amazing to grow up with a mother that is genuinely interested in everything that I do. My mom is an incredible cook and she catered to every one of my picky needs as a child and maybe still as an adult. Hanna has decided to share her vetkoek recipe with us. She has also included a few hacks.
This recipe makes 36 Vetkoek.
Ingredients:
1kg Cake Flour
15ml Salt
10ml Sugar
10g Dry Yeast
65g Margarine
650ml Luke Warm Water
Instructions:
1. Mix together flour and sugar. Add in dry yeast and mix until everything is combined.
2. Using your fingertips, rub in the margarine into the flour mixture.
3. Add water to the flour mixture and mix until it forms a dough.
4. Knead the dough for 10 minutes until it is soft and elastic.
5. Place the dough on a lightly floured bowl and cover with a cloth. Let it rest for 15 minutes.
6. After 15 minutes, knock the dough down and divide it into 26 equal pieces.
7. Alternatively, you can roll the dough out, and using a round cookie cutter you can cut out circles.
8. Deep fry in hot oil until golden brown. Remove from oil and let the oil drain on paper towels or a drying rack.
9. Serve warm and fill with savoury mince, apricot jam or syrup and cheese.
