Pt.3 of sharing my family recipes with you.
Like many other family's, food always brings mine together. In my new series, Family Secrets I will be sharing some of my family members' favourite recipes.
As many of you might know, my ENTIRE family is Afrikaans except for 2 people. So this week we have our first English family member sharing one of her favourite recipes with us. Camilla or Cam as we all know her came into our family a few years ago. Little did I know that when I introduced my brother to one of my friends that he was meeting the love of his life. Together these two love birds made me an aunt and I'll forever be grateful that they brought little Autumn Pearl into our family.
Cam has shared her version of the classic Malva pudding with us. By adding a little bit of chocolate she has brought new life to this Afrikaans classic and came up with Chocolate Malva Pudding. Cam shared fond memories of having chocolate Malva at some of her family events and I knew that I had to share this recipe with all of you.
This recipe can serve 4-6 people and can easily be doubled. If you want a classic Malva, then simply leave out the cocoa.
Ingredients:
1 cup Castor Sugar
2 Eggs
1 TBSP Apricot Jam
1 cup Cake Flour
1/4 cup Cocoa
1 tsp Bicarbonate of Soda
Pinch of Salt
2 TBSP Butter
1 tsp Vinegar
1/2 cup Milk
Sauce Ingredients:
1 cup Milk
1/2 cup Butter
1/2 Sugar
1/2 Cup Water
1/4 Cup Cocao
Instructions:
1. Pre-heat oven to 180 degrees celsius. Grease an ovenproof dish.
2. Mix together the sugar and eggs until light and fluffy. Add in jam and mix until incorporated.
3. Melt the butter and add it to a separate bowl. Add the milk and vinegar to the melted butter. Mix until it is all combined.
4. Fold the butter mixture into the egg mixture, alternating with the dry ingredients.
5. Once all of the ingredients have been incorporated put the mixture in the greased oven dish. Bake for 45 minutes or until golden on top.
6. While the pudding is baking its time to make the sauce.
7. Add all of the sauce ingredients to a pot and melt it all together on medium heat.
8. Once the pudding is ready prick holes in the top using a toothpick, skewer, or fork. Then pour the sauce over the warm pudding.
9. Serve warm on its own or add ice-cream or custard.
