Spinach Bites!

Are you looking for an easy, yet healthy snack? Then this is definitely the recipe for you! My Aunt, Wanda introduced me to this quick, low carb snack. This recipe is so adaptable and you can add in almost anything that your heart desires. We drew a lot of inspiration from Sweet as Honey but added our own spin on the recipe.
These bites are great for an easy healthy snack or for something low carb to nibble on at a braai. What is your go-to healthy snack?

Ingredients:
1 bunch of Spinach
1 cup Almond Flour or for a not so low carb bite you can use Bread Crumbs.
3 eggs
1 tsp Chia Seeds
1/4 tsp crushed Garlic or 1 clove of Garlic
1/4 tsp crushed Red Pepper Flakes
1 cup grated Cheddar Cheese (or any cheese of your choosing)
1/4 cup Feta Cheese
1 tsp fresh or dried Herbs (I used fresh Parsley and dried Mixed Herbs)
Pinch of Salt and Pepper
Instructions:
1. Pre-heat oven to 200 degrees celsius.
2. Place spinach in a pot and add enough boiling water to submerge all of the leaves. Cover the pot with a lid and let it sit for 5 minutes.
3. Drain the spinach and squeeze as much of the liquid out as possible.
4. Chop the spinach into small pieces.
5. Mix together the eggs and almond flour.
6. Add the Chia seeds, red pepper flakes, herbs, garlic, and salt, and pepper to the egg mixture.
7. Once it is all combined add in the cheddar and feta cheese. Mix until it is all incorporated.
8. Lastly, add in the spinach and mix well.
9. Once everything has been combined use a tablespoon to scoop out some of the mixture and use your hands to form a rough ball. Place on a greased baking tray or add baking paper to a baking tray.
10. Bake for 30 minutes. After 15 minutes have passed flip all of the bites over and continue cooking until golden brown. Serve warm.
